An insulin assay measures the amount of insulin in the blood after a fast period of at least eight hours. High levels are seen in people with cancer of the pancreas cells that release insulin (islet cells), an intolerance to galactose or fructose, or Cushing's syndrome; low levels are seen in people with an under-active pituitary gland, or diabetes mellitus (DM).
